Am I the last person on earth to discover mini cucumbers and cherry tomatoes. We all know that tomatoes from the store are not like farm fresh tomatoes. Must admit that I seldom even think of cucumbers but I have recently discovered the mini ones! Mini cucumbers come in a bag of 5 or 6 at Aldi and they are great. Small, crisp and good enough to just wash and munch on. Even better slice them, toss a handful of cherry tomatoes into a bowl of spring mix, add honey mustard dressing and you have a great salad. Add chicken, tuna or salmon and you have a cool meal.
We celebrated our nations birthday this week. Per usual I attended the Carthage parade on a float for the Democratic party. Good group of people. Our trailer was low so I got off successfully this year. We, and everyone else, tossed candy. After the parade was over, I saw LOTS of smashed unopened candy laying on the street. Maybe we need to rethink that part of the parade. So much waste. Attended the Macomb fire works on Friday evening. They always have a lovely display. Do miss the entertainment they used to have preceding the fireworks.
Love getting to see the Bagpipe Band from Nauvoo perform from the stage in Carthage. New this year, was the opportunity to tour the old jail on the south side of the square. Was involved with a group trying to preserve it many years ago but had not been inside it for years. Can tell you that I would not have liked to spend much time in there. Looks pretty crude and uncomfortable. Would be fun to come up with a bright idea for its use though I am not sure just what that would be. If you get a chance, go through it.
Sad news. Had two kittens at the store. Fed and watched them play every day. One was missing one day this week. When it finally came, it was seriously injured-one hind leg did not work. Took it to the vet who said it should be put down so I buried it. The very next day the other one was missing too. I sincerely hope that this was not the work of any person or persons. I loved those kittens.
I have exactly two first cousins. One lives in the hill country of Texas. Texted her today and they are about 35 miles from the devastation. That is too close. Pray for all the families of those lost in the terrible floods. So many lost children, so many broken families.
This weeks’ “elephant in the room” is the “Big Beautiful Bill” depending on where you are looking from. If you are already rich, you will be richer. If you are already poor, you will be poorer. Interesting that in my understanding the Medicaid and insurance cuts will not take effect until after the midterm elections but the tax cuts take place immediately. I understand money fairly well. I know that if I continually spend a great deal more than I make, that it would not go well. Eventually I would have to declare bankruptcy and try to start over. Can a country do that. I find this very scary. A few of us may even remember when we had a surplus under Clinton. My brain hurts.
