We Are Community for the week of May 4th, 2026, by Joyce Steiner

We Are Community 305

Happy May!  The month noted for flowers from all the April showers.  Also, the month of the first 3rd Sunday Market of the season in Bloomington.

I thought that the Monday storms were to start in the afternoon but was awakened by heavy storms early in the morning.  Enough already!  Thankfully most of them occurred before the heat of the day had time to make them much stronger.

Had a great week at the store this week.  Thanks to those of you who shop Plymouth Rock Antiques.  We have something for everyone with prices starting at 25 cents.  Got more things for the store at the Lowderman Auction on Thursday.

Time to talk about food again as I have not for a while.  I love comfort food and what is better than a good home-made chicken pot pie.  If you buy a rotisserie chicken this I a good place to start.  I use the breast meat for sliced chicken sandwiches etc. then put the carcass in my slow cooker with some water and a teaspoon of poultry seasoning.  Add a chopped large onion, 3 chopped potatoes and half a bag of baby carrots.  Cook on low for several hours then remove and debone the chicken and put the vegetables and chicken in a 9 by 13 baking dish.  Thicken the broth with a mixture of flour and water and add a couple of tablespoons of chicken soup base and a half cup of sour cream and cook until thickened.  Sprinkle a package of frozen peas or broccoli over the vegetables and meat then pour the thickened broth over that.  Cover with a pie crust.  I use the ones from Aldi that come in a 2 pack.  Bake at 350 until golden brown which is about 30 minutes.  You will know you got the proportions right when you take a taste and just want to sit down and eat the whole pie!

Have been having trouble with my phone.  Went to the store in Macomb and was told that I needed to pay for more space for Google.  In the past I have been able to delete photos to get more space.  Don’t think I’m thrilled with the T Mobile and U S Cellular merger.  I was told that I had to switch to T Mobile in Macomb but a friend who went to the Quincy office did not have to switch.

Had a lady and her daughter at the B&B on Saturday evening because they were attending a sport competition at WIU.  Turns out she knew one of my best friends.  What are the chances of that.

The Old Settlers Committee served a Matador dinner fund raiser at the PCCC on Saturday evening. In addition to the matador, they added rice and beans, home made deserts and drinks.  It was great.  Hope you were able to support Old Settlers and get a really good meal.

At lunch today, a lady came to ask if I wrote this column and tell me how much she likes it.

A gentleman also called this week to recommend a heart doctor.  I do so appreciate all the positive feed back from you all.  Thank you.

Have a great week.  Scatter Kindness and Love.  We are all in need of both.
