Last week we mentioned that services for Don Ussery were held at the PCCC (Plymouth Circle Community Center). The memorial chosen in Don’s memory was the PCCC and we were very grateful for that. Don was always a big part of keeping the building going. We would also like to thank the family of Marshall Porter for having the PCCC as his memorial recipient. And thank you too to the families who have used the PCCC as the place for their family Christmas celebrations. Thanks to all!
Food-one of my favorite topics. Have mentioned Earthquake cake in the past but was never quite happy with the recipe. Each time I make it have varied the recipe a bit and now have it where I like it. Not too sweet and really really yummy. If you need a holiday dessert, you might try my version of earthquake cake. First spray a 9 by 13 baking dish with baking spray. Scatter one cup cocoanut over the bottom of the dish followed by one cup of pecans scattered over the cocoanut. Mix a German Chocolate cake mix as directed only I substitute applesauce for the shortening as it is healthier. Pour over the cocoanut and pecans. I use the same bowl to mix ½ stick softened butter, 4 ounces softened cream cheese, one teaspoon vanilla and one cup powdered sugar until very well blended. Drop this mixture on top of the cake by spoonfulls trying to cover the cake as uniformly as possible. Bake at 350 regular, 325 convection for approximately 30 minutes or until done. This is really good and even better the second day. Try it!
We are lucky to have the Legacy Theater in our area. Attended “The Gambler Returns” last evening. It was an amazing show. The headliner, Alan Turner, did a great job impersonating Kenny Rogers. Think I was even more impressed with his back up band. Mojoe Boes was terrific on the guitar and reminded me of a neighbor. Was totally impressed with Rob Lewis on the keyboards. The theater was packed and everyone seemed to enjoy the show.
Enjoyed a Christmas party in the neighborhood with likeminded political friends on Monday evening. Thank you.
Sent out over 100 Christmas cards this week. Made cards featuring my Kitty Puff singing the Hallelujah Chorus. She is quite photogenic though could not capture her voice on the card.
Plymouth Circle met on Wednesday evening at 6:30 pm at the PCCC. We enjoyed a potato bar and desserts. We would be delighted to have new members join us on the second Wednesday of each month beginning again in February. We were happy to have a new member join us this week. No dues, just come and enjoy an evening out with good food, nice friends and then you get put to work helping with all our projects.
Went to a program at the Western Illinois Museum on Friday evening. It featured Christmas music. Helped get me in the Christmas spirit. They have nice programs as well as being what we think of as a normal museum. Need to try to get to more of their events.
Went to the Lowderman Auction on Thursday. I know little about sports and even less about baseball cards so was impressed by the prices that a showcase of baseball cards fetched. Bought a nice oak china cupboard but decided to not try to load it out on a really cold and snowy day.
Christmas is fast approaching. Hope you are in the spirit to celebrate the coming of the baby Jesus.
